Mixed Vegetable, Spinach, and Chickpea Pulao

Ingredients

3 tablespoons oil
1 and 1/2 teaspoons whole cumin seeds
1 large bay leaf
1 stick (about 2 inch) piece cinnamon, broken into smaller pieces
1 small red onion, halved and thinly sliced
1 red or yellow bell pepper, cut into 1 inch pieces
1/2 cup cabbage, finely chopped
1 cup cooked chickpeas
1 cup basmati rice
1/2 teaspoon turmeric
3/4 teaspoon cayenne powder
1 teaspoon salt
3 cups baby spinach leaves
Fresh lime juice to finish

Method of Preparation

Heat the oil until smoking, then add in the whole cumin seeds, bay leaf and cinnamon. Wait for the spices to start sizzling.
Add in it, cook until the onion softens and turns pale golden (about 5 minutes).
Add the cabbage, bell pepper, chickpeas and cook for 3 to 4 minutes.
Add the rice, turmeric, cayenne pepper, salt, and 2 cups of water.
Bring the rice to a simmer. Cover and cook for 20 minutes. Stir in the spinach leaves, allowing them to wilt.
Check for seasonings and sprinkle with lime juice before serving.
